Hi, my name is Katy, and I am the FoodieNurse. I am a nurse who loves to cook and who loves to eat even more:) I started eating a mainly vegan diet about 8 years ago, around the same time I became a nurse. This drastically improved my own health and made me realize how much the standard American diet was contributing to all the chronic health problems I was seeing my patients struggle with on a daily basis.
I don’t really like to call myself a vegan because eating a vegan diet doesn’t necessarily mean you are eating healthy. Potato chips and french fries are vegan after all. I realize completely cutting out meat and cheese is just not gonna happen for some people. I get it, but hopefully I can share my recipes and you will discover that sometimes healthy food can be delicious,comforting, and that you might just feel great after you eat it:)
My focus is on cooking and eating REAL food. I love to make simple recipes with simple ingredients. I love to make healthier, lighter versions of classic comfort foods. I love to show people they don’t have to eat meat at every meal to be full. Hopefully you will try out some of my recipes and enjoy.
My obsession with cooking led me to take a little break from nursing while attending culinary school at The Natural Epicurean Academy in Austin, Texas. Here I learned the theory and cooking of Vegan/Vegetarian, Macrobiotic, Raw Foods, and Ayurveda. I also have completed a course in Plant Based Nurition from ECornell. I have done some vegan catering, personal chef work, and even cooked at a yoga retreat center in Costa Rica.
