If you’re trying to eat healthier by eating more salads you gotta ditch your store bought salad dressing. Im sure there are some that may be healthy, but I have yet to find one that tastes any good that isn’t super high in fat, super caloric, or loaded with sugar. My life literally has been changed by this delicious homemade salad dressing. Ok, maybe thats a little dramatic:) but it is super delicious and I don’t feel guilty about eating it.
The key ingredient is cashews. The problem with oil free dressings is they don’t stick to the lettuce or greens. The solution is using whole cashews, which have more fiber and nutrition than just using an oil. I realize this does not make a super low cal or low fat dressing because cashews are high fat, but I’m only using a fourth of a cup cashew pieces and this dressing lasts me all week or longer. I use dates as the sweetener so you’re getting some fiber, antioxidants, potassium, calcium, and iron, as opposed to just calories if you used white sugar. This is my go to dressing and it makes me look forward to eating my big a** lunch salads 🙂 Hope you enjoy.
- ¼ cup soaked cashew pieces *
- 2 dates, pitted
- 2 TBS dijon mustard
- 2 TBS balsamic vinegar
- ½ cup water *
- Drain cashews and add to blender with remaining ingredients
- Blend until smooth and creamy
Buy cashew pieces in bulk or in a bag. They are cheaper than whole cashews
If too thick add more water to thin out. Dressing does tend to thicken up in fridge
